Yellow Tomato Salsa
Recipe Courtesy Real Simple
1 1/2 pounds yellow tomatoes, cut into quarters
1/2 cup red onion
1/4 cup torn basil leaves
1/2 teaspoon Kosher salt
Pulse tomatoes in a food processor until roughly chopped.
Transfer to a bowl and mix in onion, basil leaves, and salt.
Serve with hearts of romaine, sliced zucchini, and crackers.
Yield: Makes 6 to 8 servings
